Ingredients:
- 1 cup cooked rice noodles (chilled)
- 1/2 cup shredded red or green cabbage
- 1/4 cup julienned carrots
- 1/4 cup julienned cucumber
- 1/4 cup daikon radish, thinly sliced
- 1/4 cup sliced green onions
- 1 tbsp sesame seeds (optional, for garnish)
Directions:
- Cook and rinse the rice noodles under cold water, set aside.
- Prep the veggies and toss them together in a large bowl.
- Add the chilled noodles and gently mix everything together.
- Drizzle generously with my Wasabi Lime Sauce.
- Garnish with sesame seeds and extra green onions for a fresh crunch!

I started out over 10 years ago watching Forks Over Knives, decided to “try out” the plant-based meal plan and had shockingly incredible results. I’ve never turned back.
