Sauté onion over medium heat 3 minutes. (using splashes of water to keep them from sticking).
Add garlic, oregano and crushed peppers and sauté another 2 minutes.
Add the tomatoes, cover and simmer 30 minutes. Break up the tomatoes w/spoon as you stir occasionally.
Remove the basil sprig. Stack, roll and slice the fresh basil leaves.
Serve with your favorite angel hair or spaghetti. (Gluten-free pasta pictured here). Top with basil ribbons and enjoy.
For a less chunky sauce, immersion blend until desired consistency.
