Stovetop Instructions:
Add sweet potatoes, onion, garlic, chili flakes and broth to a pot.
Bring to a boil, then reduce heat and simmer 15–20 minutes, until the potatoes are fully tender.
Blend until silky smooth using an immersion blender (or carefully transfer to a blender).
Stir in cooked lentils, add lime juice and season to taste.
Warm through and serve.
Instant Pot Instructions:
Add sweet potatoes, onion, garlic, chili flakes and broth to the Instant Pot.
Cook on Manual / Pressure Cook, 8 minutes.
Quick release the pressure.
Blend until smooth.
Stir in cooked lentils, add lime juice and season before serving.
