Classic Tomato Gazpacho with Lime & Jalapeño

Ingredients
  

  • 2 cups canned tomatoes
  • 1 cucumber, chopped
  • 1 red bell pepper, chopped
  • ½ small onion
  • 2 garlic cloves
  • 1 –2 tbsp red wine vinegar
  • ½ jalapeño, thinly sliced (adjust to taste)
  • Juice of 1 lime
  • 1 –2 cups cold water (to adjust consistency)
  • Salt and black pepper to taste

Instructions
 

  • Add the tomatoes, cucumber, bell pepper, onion, garlic and vinegar to a blender. Blend until smooth.
  • Add cold water gradually until you reach your desired consistency.
  • Stir in the sliced jalapeño and fresh lime juice, then season with salt and pepper.
  • Chill for at least 30 minutes before serving for best flavor.
