Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
Mix breadcrumbs, nutritional yeast, garlic powder and salt in a bowl.
Dip zucchini fries into plant milk, then coat in breadcrumb mixture.
Arrange on the baking sheet and bake for 20-25 minutes, flipping halfway through.
