Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a bowl, mix jackfruit with BBQ sauce, spices and vinegar.
Spread the jackfruit on the baking sheet and bake for 20 minutes, stirring halfway through.
Once tender, use a fork to shred the jackfruit further.
Serve in a tortilla or lettuce wrap, topped with onions, cabbage and cilantro.
