Creamy Celery Root & Potato Mash
Ingredients:

- 2 cups low-sodium vegetable broth
- 1 tbsp nutritional yeast (optional)
- 1/4 cup unsweetened plant milk
- Salt and pepper to taste
Instructions:
- Boil the celery root and potatoes in vegetable broth until tender, about 15 minutes.
- Drain and mash, adding plant milk, nutritional yeast, salt and pepper.
- For an extra savory kick, mix in finely chopped fresh thyme or rosemary.
