This Savory Saturday, I’m sharing a simple yet delicious recipe for Lemon & Herb Roasted Mushrooms, oil-free and full of savory goodness. Perfect as a side dish, topping for salads or a savory snack!
Here’s how to make them:
- Preheat your oven to 375°F (190°C).
- Clean and slice mushrooms (preferably cremini or white button mushrooms).
- In a bowl, toss the mushrooms with garlic powder, dried thyme, lemon juice, salt and pepper.
- Spread them in a single layer on a baking sheet lined with parchment paper.
- Roast for 20-25 minutes, stirring halfway through, until golden and tender.
These roasted mushrooms are savory, earthy and tangy with the fresh kick of lemon. They’re perfect for adding extra flavor to your meals without any oil!
