Looking for a fun, crunchy snack for Friday night? This week’s Friday Fave is a little unexpected but totally addictive: Crispy Rice Paper Veggie Rolls! Think spring rolls, but baked or air-fried for that extra crisp.
What You’ll Need:
- Rice paper sheets
- Shredded carrots
- Thinly sliced bell peppers
- Julianne daikon radish
- Fresh mint or basil leaves
- Tamari or coconut aminos for dipping
- Soak rice paper briefly in warm water until pliable.
- Fill with a few strips of veggies and herbs, then roll like a burrito.
- Place seam-side down on parchment-lined tray.
- Bake at 400°F (200°C) for 15–18 mins or air-fry until golden and crispy.
- Dip into tamari or your fave sauce and crunch away!
These are light, snackable and perfect with a movie or chill night in.
