It’s Friday night, which means it’s time to grab a cozy blanket, pick a movie and enjoy a delicious snack. This week’s Friday Faves is a fun, plant-based twist on classic caramel popcorn—Date Caramel Popcorn! It’s naturally sweetened, perfectly crunchy and totally addictive.
Quick Recipe
Ingredients:
- 6 cups air-popped popcorn
- 6-8 Medjool dates, pitted & soaked in warm water for 10 minutes
- ½ cup plant milk (unsweetened)
- ½ tsp vanilla extract
- ¼ tsp sea salt
- ¼ tsp cinnamon (optional)
- Blend soaked dates, plant milk, vanilla, salt and cinnamon until smooth.
- Drizzle the caramel over the popcorn and toss to coat.
- Spread onto a parchment-lined baking sheet and bake at 300°F (150°C) for 10 minutes to set.
- Let cool and enjoy!
