It’s Friday—and you know what that means! Another feel-good, flavor-packed plant-based fave coming your way.
Recipe
Ingredients:
- 1 ripe avocado
- 1/2 cup shelled edamame (cooked & cooled)
- 1 tbsp fresh lemon or lime juice
- 1 small garlic clove (grated or minced)
- Salt & pepper to taste
- Optional add-ins: chopped cilantro, chili flakes, sesame seeds or a drizzle of tahini
- In a bowl, mash the avocado and edamame together using a fork or potato masher.
- Add lemon/lime juice, garlic, salt and pepper. Mix until combined but still a little chunky.
- Taste and adjust seasoning.
- Toast your favorite bread, then spread the smash generously on top.
- Garnish with your fave toppings—think radish slices, microgreens, chili flakes or a sprinkle of hemp seeds.
