These little no-bake treats are packed with natural sweetness, warm spices and wholesome ingredients like shredded carrots, dates, walnuts and oats. They’re soft, chewy and taste just like a slice of carrot cake—but in a healthy, snackable form!
Quick Recipe:
Ingredients:
- 1 cup shredded carrots
- 1 cup pitted dates
- ½ cup walnuts
- 1 cup rolled oats
- 1 tsp cinnamon
- ½ tsp vanilla extract
- Pinch of salt
Instructions:
- Add all ingredients to a food processor and blend until well combined.
- Scoop out small portions and roll into bite-sized balls.
- Chill in the fridge for about 30 minutes to set.
- Enjoy as a quick snack or dessert!
