This week’s Friday Faves is a creamy, tropical and naturally sweet snack that’s perfect for a cozy Friday night—Mango Chia Pudding! It’s packed with fiber, omega-3s and a refreshing fruity flavor.
Quick Recipe:
Ingredients:
- 1 ripe mango (or 2 cups frozen mango), blended until smooth
- ½ cup chia seeds
- 2 cups unsweetened plant milk (oat or almond works great)
- 1 tbsp maple syrup or date syrup (optional)
- Pinch of salt
- Shredded coconut or fresh thawed mango chunks for topping
- Whisk together chia seeds, plant milk and maple syrup in a jar.
- Let it sit for 5 minutes, then stir again to prevent clumping.
- Cover and refrigerate for at least 2 hours (or overnight for best texture).
- When ready to serve, layer with blended mango and top with coconut flakes or thawed mango chunks.
- Enjoy a cool, creamy and tropical snack!
