Hey plant-based foodies!

For this Friday Faves, I’ve got the perfect crunchy snack—Crispy Baked Zucchini Fries! They’re golden, crispy and completely oil-free, making them a guilt-free alternative to traditional fries. Perfect for dipping while watching your favorite movie!

Quick Recipe:

Ingredients:

  • 1 large zucchini, cut into fry shapes
  • ½ cup breadcrumbs (use panko for extra crunch!)
  • 2 tbsp nutritional yeast
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ cup unsweetened plant milk
Instructions:
  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Mix breadcrumbs, nutritional yeast, garlic powder and salt in a bowl.
  • Dip zucchini fries into plant milk, then coat in breadcrumb mixture.
  • Arrange on the baking sheet and bake for 20-25 minutes, flipping halfway through.
  • Serve with your favorite plant-based dip!
If you want an Italian flare on these fries, simply add in a ½ teaspoon of dried basil oregano. They are great dipped in your favorite oil free marinara sauce.

Crispy, savory and totally plant-powered—these zucchini fries are a must-try. Let me know if you give them a go!

Do you recall your mom using crushed (with a rolling pin) Saltine crackers to “bread” things live veggies or chicken?
