Hey there,
This week, let’s celebrate one of the most refreshing, crunchy and hydrating plants out there—cucumber!
Cucumbers are about 95% water, making them perfect for cooling down, staying hydrated and adding a crisp bite to so many dishes.
They’re low in calories, rich in antioxidants and super versatile:
- Slice into salads for a fresh crunch
- Add to water with some lime for a cooling effect
- Pickle them for a tangy snack
- Top rice bowls or sandwiches for extra texture
Fun Tip: Try sprinkling cucumbers with a little lemon and herbs like dill, mint or parsley—it instantly levels up their flavor!
No matter how you slice it (pun intended!), cucumbers are an easy, refreshing way to bring more plants into your meals.
What’s your favorite way to enjoy cucumbers? Reply and let me know!

I started out several years ago watching Forks Over Knives, decided to “try out” the plant-based meal plan and had shockingly incredible results. I’ve never turned back. I have lost nearly 50 pounds, and that is just one side effect that me, my family, friends and clients have experienced after making the change.
Having been an incredible cook my entire adult life, I started my own personal chef service, NuYu Nourish, to extend my help to others. I interned under a celebrity chef, became a celebrity chef myself and have been expanding my reach and goals ever since! My plan follows strictly and simply those of Dr. Mcdougall, Dr. T. Colin Campbell and Dr. Esselstyn.
