On this Thankful Thursday, I’m reflecting on how grateful I am for the comfort foods I love—like warm bowls of rice and perfectly baked potatoes. These simple, satisfying staples have not only nourished me but helped me lose 50 pounds and kept it off sustainably for over 10 years!
What I’m most thankful for is that this journey wasn’t about fad diets or extreme restrictions. There was no binge-and-bust cycle—just real, nourishing food and a lifestyle that became second nature. 🧡

I started out several years ago watching Forks Over Knives, decided to “try out” the plant-based meal plan and had shockingly incredible results. I’ve never turned back. I have lost nearly 50 pounds, and that is just one side effect that me, my family, friends and clients have experienced after making the change.
Having been an incredible cook my entire adult life, I started my own personal chef service, NuYu Nourish, to extend my help to others.
