Today, I’m feeling extra thankful for something simple yet powerful: the rainbow of colours that nature provides in plant-based foods. From the vibrant reds of tomatoes to the deep greens of kale, the golden glow of turmeric to the purple hues of eggplants, each colour tells a story of nourishment, healing and vitality.
What’s incredible is how these colours do more than brighten our plates—they also fuel our bodies in unique ways:

- Reds are rich in antioxidants that support heart health.
- Greens are packed with chlorophyll, which aids detoxification.
- Yellows and oranges provide immune-boosting vitamin C.
- Purples and blues fight inflammation and promote brain health.
Every meal becomes an opportunity to be grateful—not just for how these foods taste but for what they do for us. It’s a reminder of how beautifully connected we are to the earth and its bounty.

I started out several years ago watching Forks Over Knives, decided to “try out” the plant-based meal plan and had shockingly incredible results. I’ve never turned back.
