Happy National Onion Ring Day! That’s right, today, June 22, we’re honoring one of the all-time great snacks with a crispy, golden, totally plant-based take on a classic fave.
Why We Love Them:

Here’s how it goes:
Start with sweet onions, sliced into thick rings. Dip them in a creamy blend of homemade oat milk, a splash of aquafaba (that magical liquid from a can of chickpeas) and a touch of lemon juice.
Then dredge in a flavorful coating of almond flour, cornstarch, oat or rice flour, nutritional yeast, smoked paprika, garlic powder and a pinch of salt and pepper. Lay them out on parchment-lined baking sheets, pop them in a hot oven and bake until beautifully golden and crispy.
Want extra crunch? Sprinkle a bit more cornstarch right before baking. Serve with spicy ketchup, maple mustard or your favorite creamy dip.
