Happy Meatless Monday! Whether you’re plant-based or just starting to dip your toes into a meat-free lifestyle, remember that every meal counts. Going meatless even one day a week can improve your health, reduce your environmental impact, and set a great example for friends and family—even the biggest meat-lovers.
Tip of the Day: Start Simple!
If you’re trying to encourage family or friends to embrace a plant-based meal (even for just one day), choose something familiar. You don’t need to reinvent dinner—just swap out the meat for plant-based alternatives. For your carnivore husband or anyone skeptical about meatless meals, make it fun by involving them in choosing the recipe or cooking together!
Recipe: 3-Ingredient Lentil Tacos
You’ll need:
- 1 cup cooked lentils (canned, rinsed and drained)
- 1 pack taco seasoning
- Taco shells and toppings (like salsa, guacamole, jalapeño, roasted corn and shredded lettuce).
- Heat the cooked lentils in a pan and mix in taco seasoning.
- Warm the taco shells and fill them with the seasoned lentils.
- Top with your favorite taco toppings or hot sauces 🌶️ and enjoy!
It’s that easy! Packed with protein and flavor, these tacos will satisfy everyone at the table, no matter their usual diet preferences. Plus, lentils are rich in fiber and a great way to fuel your body with plant-based power.
Health & Wellness Note:

I started out several years ago watching Forks Over Knives, decided to “try out” the plant-based meal plan and had shockingly incredible results. I’ve never turned back. I have lost nearly 50 pounds, and that is just one side effect that me, my family, friends and clients have experienced after making the change.
Having been an incredible cook my entire adult life, I started my own personal chef service, NuYu Nourish, to extend my help to others. I interned under a celebrity chef, became a celebrity chef myself and have been expanding my reach and goals ever since! My plan follows strictly and simply those of Dr. Mcdougall, Dr. T. Colin Campbell and Dr. Esselstyn.
