Quick Recipe:

Ingredients:

  • 1 can young green jackfruit (rinsed, drained and shredded)
  • 1/2 cup homemade or store-bought oil-free BBQ sauce
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tbsp apple cider vinegar
  • Salt & pepper to taste
  • Whole wheat tortillas or lettuce wraps
  • Sliced red onion, shredded cabbage and fresh cilantro for topping

Instructions:

  • Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a bowl, mix jackfruit with BBQ sauce, spices and vinegar.
  • Spread the jackfruit on the baking sheet and bake for 20 minutes, stirring halfway through.
  • Once tender, use a fork to shred the jackfruit further.
  • Serve in a tortilla or lettuce wrap, topped with onions, cabbage and cilantro.
