Happy Friday! As we head into the weekend, I wanted to share some fun and exciting ideas to make your days off even more enjoyable and plant-powered. Whether you’re planning a relaxing time at home or some outdoor adventures, here are some plant-based treats and activities to kick off your weekend right.
1. Delicious Plant-Based Recipes:
- Baked Hash Brown Potatoes YOUR Way: You can bake frozen shredded hash browns the night before and reheat all weekend. I bake mine in parchment paper so they remain oil free. You can add in grated fresh onion, minced bell peppers and even spinach and mushrooms. 🍄 ♥️
- Tofu Scramble: Perfect for a weekend! But I BAKE my scramble with onion, nutritional yeast, granulated garlic and onion and if desired salt and pepper to taste. The final dash is that of an Indian salt called Kala Namak. It’s also called “black” salt but is an ashy link colour. It mimics a sulfur smell and taste so it adds an “eggy” flavour for those camping guest that may miss their scrambled eggs. 😅
2. Fun Activities:
- Nature Hike: Explore a local trail and enjoy the beauty of nature. Don’t forget to pack some plant-based snacks like fresh fruit or my chick pea “Chick’n” salad with oil free crackers.
- Plant-Based Picnic: Head to a nearby park with a picnic basket filled with goodies like veggie wraps, hummus, veggie sticks, fresh fruit and cold sparkling water.
3. DIY Plant-Based Projects:
- Herb Garden Starter Kit: Start your own little herb garden. It’s a fun and rewarding project, plus you’ll have fresh herbs for your meals!
- Plant-Based Ice Cream: Make your own plant-based ice cream at home with simple ingredients like frozen bananas, cocoa powder, avocado and a splash of plant milk.
4. Weekend Reading:

I started out several years ago watching Forks Over Knives, decided to “try out” the plant-based meal plan and had shockingly incredible results. I’ve never turned back. I have lost nearly 50 pounds, and that is just one side effect that me, my family, friends and clients have experienced after making the change.
