Basic Marinara – Oil Free

Ingredients
  

  • 1/2 cup grated onion
  • 6 cloves garlic minced
  • 1 - 28 oz. jar or can of San Marzano tomatoes (whole)
  • 1 tsp Oregano
  • 1 tsp crushed red peppers (optional)
  • 1 large sprig of basil
  • 6 leaves for garnish (see below)
  • Water to keep veggies from sticking
  • S/P to taste
  • (8 oz shiitake mushrooms slices thin, stems removed - optional)

Instructions
 

  • Sauté onion over medium heat 3 minutes. (using splashes of water to keep them from sticking).
  • Add garlic, oregano and crushed peppers and sauté another 2 minutes.
  • Add the tomatoes, cover and simmer 30 minutes. Break up the tomatoes w/spoon as you stir occasionally.
  • Remove the basil sprig. Stack, roll and slice the fresh basil leaves.
  • Serve with your favorite angel hair or spaghetti. (Gluten-free pasta pictured here). Top with basil ribbons and enjoy.
  • For a less chunky sauce, immersion blend until desired consistency.
