Sometimes, it’s the small discoveries in our plant-based journey that make the biggest impact. Today, I want to share one that I’m especially thankful for: the magic of whole, unprocessed foods.

When I first started this lifestyle, I focused on what I could remove—the meat, the dairy, the processed foods. But then I discovered something even more powerful: what I could ADD. Filling my plate with vibrant fruits, hearty grains and nourishing vegetables wasn’t just about making healthier choices; it was about inviting abundance into my life.

I learned to focus on these whole, nourishing foods instead of stressing over protein powders or expensive substitutes. This simple shift not only helped me lose weight and feel more energetic but also brought a joy to eating that I’d never felt before. Food became something I looked forward to, not something I worried about.

Why I’m Thankful
This discovery taught me that plant-based eating isn’t about restriction—it’s about embracing the best that nature has to offer. And for that, I’m endlessly grateful. Every colorful meal, every new ingredient I try, feels like a little celebration of life and health.

A Simple Idea to Try
One of my favorite unprocessed, wholesome meals is a quick Rainbow Bowl:

    1. Start with a base of cooked quinoa, farro or rice.
    2. Add roasted sweet potatoes or potatoes of choice, steamed broccoli and tomatoes.
    3. Top with avocado slices, a sprinkle of fine chopped kale and a drizzle of my fresh tahini sauce https://nuyunourish.com/tahini-sauce/
    4. Enjoy every bite of this colorful, nutrient-packed bowl!

The possibilities are limitless, just like your success can be!
