This Thankful Thursday, let’s show some love for seaweed—a powerhouse of nutrients straight from the ocean! This mineral-rich plant has been a staple in coastal diets for centuries and is packed with iodine, iron, calcium and antioxidants.
Why Seaweed:
- Supports Thyroid Health: Thanks to its natural iodine content
- Rich in Omega-3s: A plant-based source of essential fatty acids
- Boosts Gut Health: Contains prebiotics that support digestion
- Sustainable & Eco-Friendly: Grows without land, freshwater or fertilizers
Ways to Enjoy Seaweed:
- Wrapped Around Sushi: A classic way to enjoy it!
- Sprinkled on Salads: Adds a delicious umami crunch
- In Soups & Broths: A comforting, mineral-rich addition
- As Crispy Seaweed Snacks: Light, salty and satisfying
And speaking of seaweed in soups, I’ve used it in my New England “Damn” Chowder for a unique twist! It’s the perfect dish to highlight the ocean’s offerings. You can check it out here on my website.
A quick note about Omega-3s: While many people associate omega-3s with fish, the truth is that fish get their omega-3s from the seaweed and plant life they consume. So, it’s no surprise that seaweed is such a powerful, plant-based source of these essential fatty acids!
Seaweed is one of nature’s most nutrient-dense gifts.
What is your favorite way to enjoy seaweed?

I started out several years ago watching Forks Over Knives, decided to “try out” the plant-based meal plan and had shockingly incredible results. I’ve never turned back. I have lost nearly 50 pounds, and that is just one side effect that me, my family, friends and clients have experienced after making the change.
Having been an incredible cook my entire adult life, I started my own personal chef service, NuYu Nourish, to extend my help to others. I interned under a celebrity chef, became a celebrity chef myself and have been expanding my reach and goals ever since! My plan follows strictly and simply those of Dr. Mcdougall, Dr. T. Colin Campbell and Dr. Esselstyn.
