Today, we’re slowing things down with a bowl of comfort that’s as nourishing as it is delicious, a Chili-Lime Sweet Potato & Lentil Soup that feeds your body the kind of goodness it actually feels.
This soup is naturally creamy thanks to blended sweet potatoes, warming from a hint of chili, brightened with lime and grounded with cooked red lentils that make it hearty enough to keep you energized throughout the day. It’s completely oil-free, dairy-free and full of fiber, minerals and slow, steady fuel for your hormones, digestion and immunity.
Chili-Lime Sweet Potato & Lentil Soup (Oil-Free)
Ingredients:
- 2 large sweet potatoes, peeled and cubed (about 4 cups)
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 1 tsp chili flakes (or to taste)
- 4 cups vegetable broth (or water)
- 1 cup cooked red lentils
- Juice of 1–2 limes
- Salt + pepper to taste
- Optional: cilantro for serving
Stovetop Instructions:
- Add sweet potatoes, onion, garlic, chili flakes and broth to a pot.
- Bring to a boil, then reduce heat and simmer 15–20 minutes, until the potatoes are fully tender.
- Blend until silky smooth using an immersion blender (or carefully transfer to a blender).
- Stir in cooked lentils, add lime juice and season to taste.
- Warm through and serve.
Instant Pot Instructions:
- Add sweet potatoes, onion, garlic, chili flakes and broth to the Instant Pot.
- Cook on Manual / Pressure Cook, 8 minutes.
- Quick release the pressure.
- Blend until smooth.
- Stir in cooked lentils, add lime juice and season before serving.
