Good Morning,
For this Thankful Thursday, let’s slow down and appreciate something wonderfully simple, comforting and honestly perfect for cold weather, pasta. Not the fancy kind, not the over-thought kind, just a bowl of warm, nourishing pasta that shows up for us in a hundred different ways.
It’s easy to overlook, but pasta is one of those foods that quietly carries us through busy days, chilly evenings and those midweek moments when we just want something grounding. Whether it’s whole-grain pasta, gluten-free brown-rice pasta or whatever shape happens to be in the pantry, it’s one of the most adaptable, forgiving and satisfying winter foods we have.
And the best part? Pasta is naturally low-fat without oil, animal or even high fat plant-based imitation products. Remember it’s not the carbs, it’s what we “dress” them in. It’s actually one of the foods that helped me in my weight loss journey, losing nearly 50 lbs by eating pasta, potatoes and rice, foods most people mistakenly avoid.
Try some today with one of my sauces, Chipotle-lime, Smoky Butternut Squash, my Pesto or just my Basic Marinara.
So today, let’s be thankful for the humble bowl of pasta, warm, versatile and always there when we need comfort.

I started out over 10 years ago watching Forks Over Knives, decided to “try out” the plant-based meal plan and had shockingly incredible results. I’ve never turned back. I have lost nearly 50 pounds, and that is just one side effect that me, my family, friends and clients have experienced after making the change.
Having been an incredible cook my entire adult life, I started my own personal chef service, NuYu Nourish, to extend my help to others. I interned under a celebrity chef, became a celebrity chef myself and have been expanding my reach and goals ever since! My plan follows strictly and simply those of Dr. Mcdougall, Dr. T. Colin Campbell and Dr. Esselstyn.
