Today feels like the perfect day for something savory and comforting and Pad Thai always comes to mind.
I love how versatile Pad Thai can be, especially when it’s made at home. You can load it up with vegetables, keep it completely oil-free and still get all that bold, satisfying flavor from the sauce and seasonings.
I’m curious, what’s your favorite way to make Pad Thai? Do you keep it oil-free when you prepare it? And have you ever tried swapping out peanut butter entirely for almond butter in the sauce? It creates a slightly lighter, milder flavor while still giving that creamy texture Pad Thai is known for.
The smallest tweaks can make a familiar dish feel brand new.
I’d love to hear how you make yours.

I started out over 10 years ago watching Forks Over Knives, decided to “try out” the plant-based meal plan and had shockingly incredible results. I’ve never turned back. I have lost nearly 50 pounds, and that is just one side effect that me, my family, friends and clients have experienced after making the change.
Having been an incredible cook my entire adult life, I started my own personal chef service, NuYu Nourish, to extend my help to others. I interned under a celebrity chef, became a celebrity chef myself and have been expanding my reach and goals ever since! My plan follows strictly and simply those of Dr. Mcdougall, Dr. T. Colin Campbell and Dr. Esselstyn.
