For Wellness Wednesday, we’re giving a little love to one of the most quietly powerful greens, Spinach.
Tender and mild when raw, spinach blends beautifully into salads and mixes easily with other lettuces without overpowering them. Its soft, slightly silky texture makes every bite feel light and fresh. Once cooked, spinach transforms, becoming velvety, mellow and deeply comforting.
Spinach is rich in iron, folate, magnesium, vitamin C and antioxidants, making it a true wellness staple. It’s incredibly easy to prepare too, a quick steam or gentle sauté (no oil needed) is all it takes for the leaves to soften and shine.
Because spinach grows close to the soil (often sandy at the roots), it’s important to wash it well (unless it’s already pre-washed or labeled ready-to-eat). A simple soak and rinse helps remove any grit and keeps every bite clean and enjoyable.

I started out over 10 years ago watching Forks Over Knives, decided to “try out” the plant-based meal plan and had shockingly incredible results. I’ve never turned back.
