Butter lettuce, also known as Bibb or Boston lettuce, is one of those ingredients that’s easy to pass by, but it’s worth a second look. The leaves are soft, delicate and truly melts in your mouth, making it perfect for simple, fresh meals.
The different names come from its history. Bibb lettuce was grown in Kentucky, while Boston is a slightly larger variety, today they’re all commonly grouped as butter lettuce because of that smooth texture. It grows best in cooler seasons, so spring is when it really shines.
Instead of the usual toast, this is perfect for wrapping. My chickpea “chick’n” salad works so well tucked into these soft leaves, light, fresh and easy.
