Summer squash is one of those simple vegetables that fits beautifully into this time of year.
Light, tender and versatile, it works well in bowls, soups and easy side dishes.
One preparation I especially enjoy is raw summer squash ribbons or salad.
Simply slice the squash thin with a peeler and toss with lemon juice, herbs, cucumber and tomatoes for a fresh and colorful dish full of summer flavor.
I love how easy summer squash is to prepare while still feeling nourishing and satisfying.
