This week, I’m highlighting Romano beans, also known as Italian flat green beans.
If you’ve only ever used traditional green beans, Romano beans are worth a try. They are wider and flatter than regular green beans, with a tender texture and a rich, slightly nutty flavor that works beautifully in simple plant-based dishes.
When shopping, look for bright green pods that are firm and crisp. Before cooking, simply spray with white vinegar, rinse them well and trim off the stem ends. They can be left whole or cut into smaller pieces.
One of the easiest ways to enjoy Romano beans is to steam them until crisp-tender, then toss them with garlic, a squeeze of fresh lemon and a pinch of salt and pepper.
These beans are delicious added to soups, stews, grain bowls or served alongside your favorite plant-based entrée.
Like other beans and vegetables, Romano beans provide fiber and valuable nutrients while adding color, texture and variety to your meals.
