I hear it all the time. People tell me they can’t eat potatoes, rice spikes their blood sugar, fruit has too much sugar and carbs are the enemy if you have Type 2 diabetes.
For years, people have been taught to fear carbohydrates.
But what if we’ve been looking at the wrong culprit?
Research suggests that the bigger issue may be insulin resistance. When the body’s cells become resistant to insulin, sugar has a harder time moving from the bloodstream into the cells where it belongs.
Many people blame potatoes, rice, beans and other starches because they can raise blood sugar after a meal.
Yet populations around the world have traditionally eaten diets centered around these foods while experiencing very low rates of Type 2 diabetes.
Instead of fearing whole plant foods, it may be worth looking at the bigger picture and what contributes to insulin resistance in the first place.
If you’ve been told that potatoes, rice, beans and fruit are making your Type 2 diabetes worse, you may not have been told the whole story.
You may have been sold a bill of goods.
