Today, I’m thankful for seasonal eating.

There’s something special about enjoying fruits and vegetables when they’re naturally in season. Not only do they often taste better and fresher, but they may also offer better texture because they’re harvested closer to peak ripeness.

Produce harvested closer to peak ripeness may also retain more nutrients and beneficial plant compounds than produce picked early for long-distance shipping.

Eating seasonally can also add more variety to your meals throughout the year. In winter, we naturally enjoy foods like Brussels sprouts, sweet potatoes, winter squash, citrus fruits and pomegranates. Spring brings asparagus, peas, radishes and strawberries, while summer offers watermelon, tomatoes, peaches, berries, zucchini and corn. Then fall welcomes apples, pears, pumpkins and more squash varieties.

This natural rotation of produce helps keep meals interesting while encouraging us to enjoy a wider range of plant foods throughout the year.
