Have you ever had friends, neighbors or family gift you a big batch of fresh tomatoes from their garden? I’m always thankful for an abundance of fresh produce and tomatoes are one of the easiest things to turn into something delicious.

One simple option is to marinate them without oil. Slice fresh tomatoes and toss them with white balsamic vinegar, fresh lemon juice, garlic, basil and freshly ground black pepper. Let them sit for 15–30 minutes so the flavors can come together.

You can enjoy these marinated tomatoes on their own, spoon them over toasted whole-grain bread, add them to salads or serve them alongside your favorite meal.

I recently tossed these marinated tomatoes into some hot, cooked pasta. The warmth of the pasta helps the tomatoes break down just a little, creating an even bigger burst of flavor throughout the dish.

The best recipes can start with someone simply saying, “I have too many tomatoes, would you like some?” 😊
