Do you ever cook your greens until they’re so soft that they lose their fresh flavor and texture?
Leafy greens like spinach, kale, Swiss chard and collard greens don’t always need a long cooking time. Sometimes, less is more!
Try quickly steaming or wilting your greens until they’re just tender. They’ll keep more of their fresh flavor, beautiful color and satisfying texture.
I love how a simple change in the way you cook a vegetable can make such a difference. You don’t always need a complicated recipe, sometimes, it’s simply about not overcooking the food.
The next time you’re making greens, try cooking them a little less and see if you notice the difference!
How do you like your greens, tender or still a little crisp?

I started out over a decade ago watching Forks Over Knives, decided to “try out” the plant-based meal plan and had shockingly incredible results. I’ve never turned back. I have lost nearly 50 pounds, and that is just one side effect that me, my family, friends and clients have experienced after making the change.
Having been an incredible cook my entire adult life, I started my own personal chef service, NuYu Nourish, to extend my help to others. I interned under a celebrity chef, became a celebrity chef myself and have been expanding my reach and goals ever since! My plan follows strictly and simply those of Dr. Mcdougall, Dr. T. Colin Campbell and Dr. Esselstyn.
