Meet the adzuki bean, small, red and mighty! Packed with protein, fiber and minerals, these little gems are a plant-based powerhouse.
To prepare:
Use 1 cup dried adzuki beans. Soak them for 6–8 hours. Rinse the beans, then cook in your Instant Pot with 3 cups of water (about a 3 to 1 ratio of water to dry beans), at high pressure for 10 minutes, followed by a natural release for 12 minutes.
Try them with rice, a classic in Asian cooking or season with garlic or cumin and ginger for a simple, nourishing bowl. Add roasted veggies or a light tomato-based sauce for extra flavor and variety.
