This week, I’m celebrating beefsteak tomatoes.
There’s a reason so many people wait all year for a truly ripe beefsteak tomato. Big, juicy and full of rich summer flavor, they’re one of the season’s greatest pleasures.
One of my favorite ways to enjoy them is simply sliced with a little salt and pepper. That’s often all they need. They also make a wonderful topping for whole grain toast or a simple sandwich with fresh herbs, crisp lettuce or other seasonal fixin’s.
When tomatoes are perfectly in season, their natural sweetness and freshness really shine.
Have you been enjoying fresh beefsteak tomatoes this summer? What’s your favorite way to eat them?

I started out over a decade ago watching Forks Over Knives, decided to “try out” the plant-based meal plan and had shockingly incredible results. I’ve never turned back. I have lost nearly 50 pounds, and that is just one side effect that me, my family, friends and clients have experienced after making the change.
Having been an incredible cook my entire adult life, I started my own personal chef service, NuYu Nourish, to extend my help to others. I interned under a celebrity chef, became a celebrity chef myself and have been expanding my reach and goals ever since! My plan follows strictly and simply those of Dr. Mcdougall, Dr. T. Colin Campbell and Dr. Esselstyn.
