Summer berries are at their peak right now, making this a great time to enjoy their natural sweetness and vibrant flavor.
This quick berry chia jam is simple to make and naturally sweet. Spread it on whole grain toast or whole grain/gluten-free crackers for an easy breakfast, snack or light appetizer.
Berry Chia Jam
Ingredients
- 2 cups fresh strawberries, blueberries, raspberries or a combination
- 1 tablespoon water
- 2 tablespoons chia seeds
- 1–2 teaspoons maple syrup or date syrup (optional)
- 1 teaspoon lemon juice (optional)
Instructions
- Add the berries and water to a small saucepan over medium heat.
- Cook for 5–8 minutes, stirring occasionally, until the berries soften and release their juices.
- Lightly mash the berries with a fork or potato masher.
- Stir in the chia seeds, maple syrup or date syrup (if using) and lemon juice.
- Remove from heat and let the mixture sit for about 10–15 minutes to thicken.
- Serve on whole grain or gluten-free toast or crackers.
