These Black Bean & Corn Baked Balls are my kind of snack, hearty, plant-based and baked to golden perfection. They’ve got the perfect mix of creamy black beans, sweet corn, a little spice and that crispy outer bite that makes you want just one more.
They’re the kind of bite you can pop in the oven and enjoy on their own, dipped in your favorite sauce or tossed over a salad for an extra protein boost. Totally guilt-free, totally crave-worthy.
Here’s the simple way to make them:
Mix 1 can of black beans (lightly mashed) with 1 cup of whole corn kernels, ½ cup of mashed sweet potato, 2 tbsp oat flour, chopped cilantro, garlic, cumin and a pinch of salt. Shape into small balls, place on parchment and bake at 400°F (200°C) for about 20 minutes, until crisp on the outside and tender inside.
Snack happy, your Friday fave is served.
