On this Thankful Thursday, let’s give some love to a green that doesn’t always get the spotlight, Broccoli Rabe (Rapini).
Unlike its milder cousin broccoli, rapini is bold, bitter and robust, a flavor that wakes up your taste buds and brings depth to your meals. Packed with vitamins A, C and K, along with antioxidants and minerals, it’s not just tasty but also incredibly nourishing.
One of our favorite ways to enjoy it? On a plant-based pizza. Its earthy, slightly bitter bite balances creamy toppings and adds a gourmet touch to a simple dish.
This week, maybe swap out your usual greens and try rapini instead, you might just find yourself thankful for its unique kick.

I started out over 10 years ago watching Forks Over Knives, decided to “try out” the plant-based meal plan and had shockingly incredible results. I’ve never turned back. I have lost nearly 50 pounds, and that is just one side effect that me, my family, friends and clients have experienced after making the change.
