Carrot Cake Energy Balls

Ingredients:

  • 1 cup shredded carrots
  • 1 cup pitted dates
  • ½ cup walnuts
  • 1 cup rolled oats
  • 1 tsp cinnamon
  • ½ tsp vanilla extract
  • Pinch of salt

Instructions:

  1. Add all ingredients to a food processor and blend until well combined.
  2. Scoop out small portions and roll into bite-sized balls.
  3. Chill in the fridge for about 30 minutes to set.
  4. Enjoy as a quick snack or dessert!
