Some recipes are simple, but they stay with you.

This cherry ginger granola is one of those. Warmly spiced with ginger, naturally sweetened and balanced with just the right touch of dried cherries, it’s something you can come back to again and again.

It’s easy to make, keeps well and works just as well for a quick breakfast as it does for something to snack on throughout the day.

Cherry Ginger Granola

Ingredients:

  • 4 cups rolled oats
  • 1 T ground flax (optional)
  • 1 T chia seeds (optional)
  • 1 tablespoon ground ginger
  • ¼ cup pecan pieces
  • 1 cup unsweetened applesauce
  • 1 T maple syrup
  • 1 teaspoon vanilla extract
  • ¼ cup dried cherries
  • Pinch of salt

Instructions:

  • Mix all dry ingredients in one large bowl.
  • Mix the wet ingredients together.
  • Combine the two and mix well, ensuring that the oats are covered and moist.
  • Spread onto a parchment-lined cookie sheet.
  • Place in a preheated 340°F oven for 30 minutes, mixing halfway through.
  • Remove from oven after 30 minutes, add in the dried cherries and give it a toss. Allow to cool.
  • It will get a little crisper as it cools. If you prefer it to be a little more crunchy, leave it in another 5 minutes, keeping an eye on it.
  • Once completely cooled, place in a glass jar or airtight container and refrigerate for up to 4 weeks.

This is one of those recipes that’s been kept a little closer over time, not because it’s complicated, but because it’s been a personal staple.
