Quick & Easy Chili Garlic Noodles
Serves 2
Ingredients:
- 8 oz (225 g) noodles of choice
- 5–6 cloves garlic, finely minced
- ¼ cup water (plus more to splash as needed)
- 1 tsp chili flakes (or chili garlic sauce, ½–1 tbsp, to taste)
- 3 tbsp soy sauce or tamari
- 1 tbsp rice vinegar or lime juice
- 1 scallion, sliced at an angle
- Optional: 1–2 cups steamed veggies (broccoli, bok choy, mushrooms)
- Cook noodles according to package instructions, drain and set aside.
- In a pan over medium heat, add garlic and water or broth. Cook gently until fragrant (about 45 seconds).
- Stir in chili garlic sauce or chili flakes, then add soy sauce and vinegar or lime juice. Stir to heat through and combine.
- Add the cooked noodles to the pan and toss well so the sauce coats the noodles evenly. Add a splash of broth if needed for extra sauciness.
- Remove from heat and finish with scallions (and veggies if using).
