If you’re looking for something light, refreshing and easy to take with you, today’s spotlight is a simple twist on a classic, Tomato Gazpacho.
Traditionally enjoyed in warmer months, gazpacho is a chilled soup made with blended vegetables. Since fresh tomatoes aren’t quite in season yet, this version uses canned tomatoes while still delivering that bright, fresh flavor.
Recipe:
Ingredients (about 3–4 servings):
- 2 cups canned tomatoes
- 1 cucumber, chopped
- 1 red bell pepper, chopped
- ½ small onion
- 2 garlic cloves
- 1–2 tbsp red wine vinegar
- ½ jalapeño, thinly sliced (adjust to taste)
- Juice of 1 lime
- 1–2 cups cold water (to adjust consistency)
- Salt and black pepper to taste
Instructions:
- Add the tomatoes, cucumber, bell pepper, onion, garlic and vinegar to a blender. Blend until smooth.
- Add cold water gradually until you reach your desired consistency.
- Stir in the sliced jalapeño and fresh lime juice, then season with salt and pepper.
- Chill for at least 30 minutes before serving for best flavor.
This gazpacho can be enjoyed in a bowl, but it’s also perfect as a portable option, simply pour it into a jar or bottle and take it with you for a refreshing, savory drink on the go.
