For this Tasty Tuesday, we’re baking something light, cozy and surprisingly addictive, baked jicama. Jicama is that crunchy, slightly sweet root vegetable that transforms beautifully in the oven. Once it’s sliced into thin fries, seasoned with smoked paprika, garlic, salt and pepper and roasted until golden, it becomes the perfect mid-week snack, warm, savory, satisfying and completely plant-based.
What I love most about baked jicama is how naturally wholesome it feels. It’s low in calories but high in fiber, it stays crisp even when baked without oil and it carries spices in such a gentle, comforting way. It’s the kind of snack you can enjoy without any heaviness, just simple goodness coming out of the oven.
