When Autumn whispers, I listen and one golden whisper coming through this season is delicata squash. With its sweet, nutty flesh and edible skin, this squash isn’t just beautiful, it’s a whole-food gem that brings vitamins, fiber and comfort in every bite.
What makes delicata squash so wonderful is how it pairs with earthy herbs like sage. Roast it until it’s tender and golden, let its natural sugars caramelize just a bit and you have a side or a centerpiece that feels both luxurious and nourishing.
