It’s Savory Saturday and we’ve got something truly satisfying simmering in the kitchen! Garbanzo beans are rich in plant-based protein, fiber and nutrients and they’re incredibly versatile. Today we’re sharing two delicious ways to enjoy them: one with bold Mediterranean flavors and one with a savory Asian twist.
Mediterranean Style:
- 1 lb. dry chick peas, soaked overnight, rinsed and drained
- 1 small onion chopped
- 1 small shallot minced
- 4–6 cloves garlic minced
- 4 cups water (to cook beans)
Instructions:
- Sauté onion and shallot in Instant Pot until translucent splashing water so not to stick.
- Add the garlic and sauté another minute.
- Add the beans and water and give it a good stir.
- Place the lid on, button to seal and set on manual for 20 minutes.
- Release pressure.
Add to beans once cooked:
- 1 T oregano
- 1 T mint
- 1 T nutritional yeast
- Salt and WHITE pepper to taste
Add these to a bowl with cooked farro, cucumber, tomatoes, kale and red onion and a drizzle of my tahini sauce (on website).
Asian Style:
For an Asian twist leave out the mint and oregano and simple add in some low sodium teriyaki! Add to a bowl of brown rice and steamed broccoli for another clean and light meal!
