Grilled Baby Bok Choy

Ingredients~

  • 4 baby bok choy, halved lengthwise
  • 2 tablespoons low-sodium soy sauce (or tamari sauce for a gluten-free option)
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 lemon, cut into wedges
  • Steamed brown or white rice, for serving

Instructions~

Whisk together the low-sodium soy sauce (or tamari), garlic and fresh ginger. Brush the mixture over the cut sides of the baby bok choy.

Grill over medium heat for 2–3 minutes per side or until lightly charred and tender. Serve with a squeeze of fresh lemon alongside your steamed rice.
