Happy Thankful Thursday!
Today, let’s give thanks for a fruit that’s as rare as it is remarkable, the humble huckleberry. Often found growing wild in the mountains of the Pacific Northwest. They’re hand-harvested, seasonal and treasured for their deep, tart-sweet flavor.
But beyond their taste, these little berries pack a lot to be grateful for. They’re bursting with antioxidants, vitamin C, iron and potassium, nutrients that support immunity, energy and heart health. For generations, they’ve been celebrated as both food and medicine, nourishing people in simple yet powerful ways.
Enjoy them stirred into warm oatmeal or simmered into a naturally sweet jam. However you enjoy them, huckleberries remind us of nature’s abundance and the gratitude found in life’s rarest, most special gifts.

I started out over 10 years ago watching Forks Over Knives, decided to “try out” the plant-based meal plan and had shockingly incredible results. I’ve never turned back.
