Happy Tasty Tuesday!
King oyster mushrooms are one of the best ingredients for anyone transitioning into a plant-based lifestyle. Their thick stems turn firm, chewy and almost meaty when cooked, giving you that satisfying bite many people miss after leaving animal products behind. They also contain natural compounds that support overall wellness, making them a nourishing addition to any meal.
They’re incredible flavor sponges, soaking up whatever spices or marinades you use. For this batch, I pressed them into a nonstick pan over medium-high heat and flipped them a couple of times while pressing down to get that crisp golden edge, no oil needed.
They’re delicious in a hearty sandwich, on top of a special pasta or pressed into my Rustic Cauliflower Casserole. And if you want even more depth, try marinating and grilling them for a full-on flavor bomb.

I started out over 10 years ago watching Forks Over Knives, decided to “try out” the plant-based meal plan and had shockingly incredible results. I’ve never turned back. I have lost nearly 50 pounds, and that is just one side effect that me, my family, friends and clients have experienced after making the change.
Having been an incredible cook my entire adult life, I started my own personal chef service, NuYu Nourish, to extend my help to others. I interned under a celebrity chef, became a celebrity chef myself and have been expanding my reach and goals ever since! My plan follows strictly and simply those of Dr. Mcdougall, Dr. T. Colin Campbell and Dr. Esselstyn.
